 Easy Crispy Sweet Cannelloni Cookies 😱

Ingredients
2 large eggs
80g sugar
1 pinch of salt
1/2 tsp vanilla extract
80g unsalted butter
100g all-purpose flour
100ml milk
For the filling
Pastry cream of your choice
You can also use dulce de leche, whipped cream, or chocolate.

Preparation

1. Prepare the mixture
In a bowl, combine the eggs, sugar, a pinch of salt, and vanilla extract. Beat with a hand whisk until the mixture is slightly frothy.

2. Add the butter
Add the melted, but not hot, butter. Mix well until combined.

3. Combine the flour
Gradually add the puffed flour and mix until no lumps remain.

4. Add the milk
Pour in the milk gradually while mixing. The batter should be a smooth, light, pourable mixture similar to crepe batter.

5. Cook the canutillos
Heat a non-stick pan over medium-low heat. Pour a small amount of batter and spread it evenly with a spoon.

6. Fold
Cook until the canutillos are golden brown and crisp on both sides. They shouldn't be too thick, as they will be difficult to roll later.

7. Shape the dogs
Once the hot cantilever is removed, quickly roll it using the handle of a spoon or a rolling pin. Do this while it's still hot, as it will harden when it cools.

8. Cool
Place the canutillos on a plate or grill and let them cool completely. They will be really crisp when they cool.

9. Fill
Once cool, fill the canutillos with pastry cream using a pastry sleeve. Fill both ends until they are really full.

The result: Sweet, fluffy, golden, and crispy canutillos with a hint of vanilla and butter. It is ideal for filling with pastry cream, dulce de leche, whipped cream or chocolate.
