 Ham & Cheese Stuffed Crepes

These crispy, golden ham and cheese stuffed crepes are perfect for breakfast, brunch, or a quick dinner. They're soft on the inside, crispy on the outside, and filled with melted cheese and savory ham.

Ingredients
For the Crepes
1 cup all-purpose flour
2 large 
1 1/4 cups milk
2 tablespoons melted butter
1/4 teaspoon salt
1 teaspoon sugar (optional)
For the Filling
8 slices deli ham
8 slices mozzarella, Swiss, or provolone cheese
1 tablespoon butter (for frying)
Instructions 

Step 1: Make the Crepe Batter
In a large bowl, whisk together the flour and salt.
Add the eggs, milk, and melted butter.
Whisk until the batter is smooth.
Let the batter rest for 15–20 minutes.
Step 2: Cook the Crepes
Heat a lightly buttered nonstick skillet over medium heat.
Pour about 1/4 cup of batter into the pan and swirl to coat the bottom.
Cook for 1–2 minutes until the edges lift.
Flip and cook for another 30–60 seconds.
Repeat with the remaining batter.
